Cheddar Broccoli Soup

Ingredients
- 1 pound broccoli, chopped
- 3 carrots, diced
- 1 medium yellow onion, diced
- 2 cups vegetable broth
- 2 cups whole milk
- 3 tablespoons flour
- 8 ounces shredded cheddar cheese
- 3 tablespoons butter
- 3 cloves of minced garlic
- ½ teaspoon smoked paprika
- Red pepper flakes
- Sea salt and pepper to taste
Instructions
- Add the butter to a medium pan and sauté onions.
- Just before the onions become translucent, add minced garlic.
- Add the flour and continue to sauté until mixture is a light brown color.
- Whisk in vegetable broth until blended. Under medium high heat, stir until the mixture forms a consistent roux.
- Under medium heat, add milk, smoked paprika, pepper, and red pepper flakes.
- Add the chopped broccoli and carrots and continue to simmer until vegetables are tender, about 20 minutes.
- Fold in cheddar cheese and let simmer until consistent. Salt and pepper to taste.
