Arrabbiata Sauce

- 20 g Extra virgin olive oil
- 40 g of diced onion
- 9 g garlic, minced
- 840 g plum tomatoes
- 4.2 g sea salt
- 1.2 g black pepper
- .6 g red pepper flakes
- 50 g red wine
- Heat olive oil.
- Add diced onion and sauté over medium low until translucent (about 8 minutes). Add garlic and sauté another 4 minutes or until just starting to color.
- Add black pepper, red pepper flakes and sea salt.
- Add wine, turn heat up to medium high and cook until reduced, about 2 minutes and then turn heat to low.
- Add plum tomatoes and cook over low heat for 1 hour.
