Beef “Flankenstein” Marinade

Ingredients
- 1 cup red wine
- 1.5 cups red wine vinegar
- 2 cups water
- 2 bay leaves
- 5 juniper berries
- ½ teaspoon ground allspice
- 1 teaspoon black peppercorns
- 1garlic clove minced
Instructions
- Bring all the ingredients to a boil over high heat.
- Turn heat off and pour the marinade over Large cut of flank steak trimmed of silverskin, (3 pounds) placed in a lexan or non-reactive container.
- Cover when cool and place in your walk-in for two days, turning frequently.

Ingredients
- 2 carrots
- 2 celery stalks
- 1 red onion or leek
- ½ cup of parsley
- 1 apple
- 1 cup raisins
- ¼ cup brown sugar
- 1 cup gingersnaps (optional)
- Beef “Flankenstein” Marinade (recipe above)
Instructions
- Roughly chop celery, red onion, parsley, apple, raisins and gingersnaps.
- Take the beef out of the marinade and pat dry. Strain the marinade.
- Place in a large hot pan with 2 tablespoons of extra virgin olive oil and a half stick butter.
- Sear on all sides then add the above ingredients and sauté with the beef.
- After the vegetables have been heated, add the marinade.
- Braise over medium heat for an hour or until tender.
- Cool and portion the meat and top on each pizza to melt fabulously in all its sweet-sour majesty.
